White bread
Butter or margarine
Blue cheese
Cream cheese
Red, green and yellow
peppers
Parsley
Mix
blue cheese with equal amount of cream cheese. It is easier to mix the
cheeses if they are not cold. You can also add a few drops of cream to
make them easier to mix, but be careful not to add too much. Butter the
bread and cover with a thick layer of
cheese mixture.
Arrange pepper strips of different colors on top and garnish with a
parsley sprig.
Variation: Use
halved seeded or seedless grapes instead of peppers. |
Dark bread (i.e., squaw bread,
multigrain,
pumpernickel, or rye)

Gorgonzola cheese
Canned or fresh pears
Lemon juice (if using fresh
pears)
Paprika
Lettuce
Cut pear in wedges. If using
canned pears, drain in colander or on paper towel. If using fresh pears,
dip wedges in lemon juice to prevent browning. Place lettuce on the
buttered bread and top with plenty of gorgonzola. Place a pear wedge on
top of the gorgonzola and sprinkle with paprika.
