OPEN-FACED SANDWICHES |

Scandinavian open-faced sandwiches come in many shapes and sizes. They are a feast for the eye as well as for the palate. Small ones, as those pictured, are served as hors d'œvres at the beginning of a dinner, or as part of a smörgåsbord (buffet). Two or three larger ones make a meal and can be served with beer, wine or tea, and a dessert. Really large ones, called "gangways" are made by slicing the loaf lengthwise and placing three or four different toppings on each slice. They are like several smaller sandwiches combined into one large. |

Another variation is a sandwich torte, also made of bread cut lengthwise. The slices are stacked on top of each other with various fillings in between. When served, the torte is sliced like a cake. Whatever their shape and size, care is always taken to serve colorful and appetizing creations.
